The boquet profile brings up a sweet and mellow range of notes. It has a distinctive citrus acidity particularly with tangerine and orange notes. Its main flavour characteristics are syrup and candy like. The smooth body and balance help to enhance the overall quality.
Processing Method
Harvesting occurs in April-May and in October to January. Red cherries are hand oicked with attention to detail and commitment to quality. After harvest the coffee is naturally pulped, fermented for 24 hours. From there the beans are sun dried on suspended raised beds under a marque.
